White chocolate mousse with black forest sauce
This silky white chocolate mousse is topped with a decadent black forest sauce.

Ingredients (8)

  • 100ml pure (thin) cream
  • 1 vanilla bean, split, seeds scraped
  • 250g good-quality white chocolate, roughly chopped
  • 300ml thickened cream
  • 3 eggwhites
  • 1 tablespoon lemon juice
  • 150g good-quality dark chocolate, roughly chopped
  • 30 (about 1/2 jar) pitted morello cherries, drained on paper towel

Method

  • 1.
    Place pure cream, vanilla pod and seeds in a pan over medium heat and bring to just below boiling point. Remove from heat, then stand for 15 minutes to infuse. Melt white chocolate in a heatproof bowl over a pan of simmering water (ensure bowl doesn't touch water). Cool slightly.

    Meanwhile, whip the thickened cream. In a separate bowl, whisk eggwhites to soft peaks. Add vanilla cream to melted chocolate and stir to combine. Fold in eggwhites, then cream and juice. Divide among six 250ml glasses, cover with plastic wrap and refrigerate overnight.

    For sauce, melt dark chocolate in a bowl over a pan of simmering water (ensure bowl doesn't touch water). Cool slightly, then stir in cherries and spoon over mousse to serve.
