White Italian slaw
White Italian slaw
Bright fresh flavours shine in this tangy white Italian slaw, with fennel, cabbage and parmesan.

Ingredients (8)

  • 1 white onion
  • 1 mini drumhead cabbage
  • 1 large fennel bulb (white part only)
  • 200g shaved parmesan

White balsamic dressing

  • 3/4 cup (185ml) extra virgin olive oil
  • 1/4 cup (60ml) white balsamic vinegar
  • 1 tablespoon lemon juice
  • 1 tablespoon honey

Method

  • 1.
    Using a mandoline or grater, finely shave the onion, then place in a bowl of iced water with 1 tsp sea salt. Set aside for 20 minutes. Drain and pat dry with paper towel.
  • 2.
    Meanwhile, for the dressing, combine all the ingredients in a screwtop jar. Season, then seal and shake to combine.
  • 3.
    Using a mandoline or grater, thinly shave the cabbage and fennel. Place in a large bowl with the onion and 150g parmesan and gently toss to combine.
  • 4.
    Just before serving, top with remaining 50g parmesan, drizzle with dressing and season with freshly ground black pepper.
