Winter salad with walnut dressing
Liven up cold, dark, winter days with this nourishing and vibrant winter salad.

Ingredients (11)

  • 1 red witlof
  • 1 witlof (Belgian endive)
  • 1 frisee (curly endive)
  • 2 oranges, peeled, sliced into rounds
  • 250g jar Persian feta, drained
  • 1/4 cup (25g) walnuts, toasted
  • Seeds of 1 pomegranate
  • 2 tablespoons walnut oil
  • 2 tablespoons olive oil
  • 1 teaspoon Dijon mustard
  • 2 tablespoons white wine vinegar

Method

  • 1.
    Remove and discard the outer leaves of the lettuces, then tear the inner leaves and arrange on a large shallow platter. Arrange the orange slices on top and scatter over the feta, walnuts and pomegranate seeds.

    Whisk remaining ingredients together and season. Drizzle dressing over salad and serve.
