Wood-roasted garlic with soft cheese and bread

Slow roasting garlic produces a sweet and creamy flavour which pairs perfectly with salty cheese and crusty bread.
Ingredients (5)
- 4 garlic bulbs
- 4 thyme sprigs
- 1/3 cup (80ml) extra virgin olive oil, plus extra to serve
- 250g soft fresh goat's cheese or ricotta
- 1 loaf woodfired bread, thickly sliced
Method

1.Using a sharp knife, cut the top off each garlic bulb to expose tops of the cloves. Don't remove the papery skin.

2.Cut out 4 large squares of foil and place a garlic bulb and a sprig of thyme on each. Drizzle each with 1 tablespoon oil, season with salt and pepper, then wrap tightly. Place in the fire and roast for 30 minutes. Alternatively, place on a baking tray and roast in an oven preheated to 180°C for 35 minutes.

3.To serve, peel away papery garlic skin, squeeze out the soft cloves, then mash. Spread garlic onto bread slice, top with cheese, season with pepper and drizzle with olive oil. Serve immediately.
