Love it or hate it, coriander is the star of this specialty tipple concocted by Newtown's Hartsyard. The Mr. White cocktail is a coconut twist on tropical sensation the Pina Colada and proving a firm favourite at the bar, despite its controversial herbal garnish.
Ingredients (7)
- 60ml white rum
- 30ml lime Juice
- 30ml Toasted Coconut Syrup
- 3 sprigs of coriander
Toasted Coconut Syrup
- 100g of desiccated coconut
- 200g sugar
- 200g water

1.For toasted coconut syrup, roast coconut in oven on 140 degrees for 20 mins or until golden.

2.Mix toasted coconut, sugar and water in saucepan and cook on low for 30 mins.

3.Allow the coconut and sugar syrup infuse off of heat for a further 30 mins.

4.Strain coconut out of syrup and measure quantity.

5.Mix an equal measure of coconut cream to coconut syrup (ie. to 300ml of syrup add 300ml of cream)

6.For the Mr. White Cocktail, mix together the rum, the lime juice and the syrup.

7.Shake with ice and double strain into a highball ball glass.

8.Fill glass with ice and top with soda.

9.Garnish with a coriander sprig or two.
