Versions of this fragrant herb mix pop up all over the Middle East. It is great sprinkled over salads or enjoyed simply with some fresh Turkish bread and oil.

Ingredients (5)

  • 1/3 cup (50g) sesame seeds
  • 1/3 cup thyme leaves
  • 1 tbs sumac
  • Extra virgin olive oil, to serve
  • Turkish bread, to serve

Method

  • 1.
    Toast the sesame seeds in a dry frypan over a medium-low heat for 2 minutes or until golden. Set aside to cool.
  • 2.
    Place the thyme, sumac and 1 tsp salt in a spice grinder or small food processor and whiz until finely ground. Add sesame seeds and whiz for a few seconds to break up a little and incorporate them into the mix (be careful not to grind too much or it will form a paste).
  • 3.
    Tip into a shallow serving bowl. Serve with olive oil and little chunks of warm Turkish bread for dunking – first in the oil, then into the za'atar.
