With its whistle-wetting native-botanical-led cocktail menu, Songbird rooftop bar at The Ritz-Carlton, Perth is set to become the latest hotspot for sunset drinks in WA this summer when it opens on November 15, 2019.
Executive chef Jed Gerrard and bar manager Eoin Kenny have designed the enticing new drinks and grazing menus, which will see innovated cocktails and summer-ready dishes – think barbecued meats, fresh seafood and seasonal produce – brought to the table.

Inspired by Karijini’s gorges and the Pemberton forests, ‘The West’ cocktail combines The West Winds Sabre Gin, Regal Rogue Wild Rose Vermouth, Jarrah honey water and Singlefile Chardonnay Verjus, with a fennel and strawberry dust. Classic martinis will be served up alongside local, native pickles and condiments, and aperitivo options will focus on local spirits and botanicals.
Alongside the lengthy cocktail list will be a selection of local spirits, craft beers and wine.
