And Chef Brent Strong is at the helm of the destination's flavoursome fare.
Sixteen luxury villas have emerged on 7 Mile Beach in Shoalhaven, just in time for the spring-summer vacation season. And, they’ve brought a bold new dining option to the region.
Each of the Bangalay Luxury Villas has been designed to reflect the beauty of the coastal region, and offer a view into the natural setting.

Better yet, the accommodation has brought all-new Bangalay Dining to the breezy setting, where Chef Brent Strong, along with Thomas Johns, is preparing a menu that respects locality and sustainability.

The menus on site have been developed with care, taking inspiration from the surrounding area – with a focus on native ingredients and local produce. Oysters, flat head, local beef, native herbs and florals – think Eucalyptus, Geraldton Wax and Banksia – will mingle on the menu.

Inside the villas, bespoke interior furnishings and minimalist styling has been curated by interior designer and Bangalay owner Michelle Bishop. Style and comfort come together in these tidy, petite suites that open up into nature.
