This new luxury stay has opened in the Hunter Valley and it's focused on food

A zero-waste approach to food, roaming farm animals and beehives abound on this scenic property.

Among the sprawling wineries of the tranquil Hunter Valley, a 70-room hotel has opened its doors. Australia’s second voco hotel, voco Kirkton Park Hunter Valley is set on 70 acres of countryside, with misty mountain views – minutes away from the region’s favoured cellar doors.

Here, dining is at the fore with a paddock-to-plate focus. In-house restaurant Locavore Dining alongside Epoche Lounge Bar serve guests produce-driven lunch and dinners, while The Conservatory offers a sophisticated high tea overlooking the hotel’s rose garden.

The fruits of the hotel’s bountiful veggie garden are put to use daily – connecting farmer, gardener and chef – while on-site beehives produce the honey used in the restaurant and bar.

Sustainability will play a key role here too, with all rooms featuring plastic-free bedding made from recyclable materials, large-bottle amenities selected to reduce the volume of plastic waste. And, the kitchen team is proud to employ its zero-waste approach to food. The property’s resident farm animals happily receive leftover veggies too.

Dressed to impress by celebrated interior designed Greg Natale, the new hotel is swathed in moody blue hues and touches of sunshine yellow – bestowing a chic upgrade on the pre-existing structure.

Between winery visits and delicious dishes, guests can enjoy the tennis courts, billiards room, indoor heated pool, sauna, spa and gym on site.

In a previousl life, the property was one of the first hotels established in the Hunter Valley. Now, guests can enjoy a handsomely refurbished stay.
