Set amongst the hills of Yamanashi Prefecture, Nishiyama Onsen Keiunkan is not only a beautiful place to stay, but it’s also the oldest hotel in the world. Founded in 705 AD, it has remained in the same family ever since, having been passed down through the generations. Its natural hot springs have supplied the onsite onsen with water for some 1300 years, and the decadent evening meals boast a glittering reputation

Ryokans are usually associated with the countryside, as they are often located in the mountains or with a stream running through. But last year Tokyo got its first ultra-luxe ryokan in the form of Hoshinoya. And wow, is she a beauty. Each floor features six elegantly decorated rooms with one communal ‘ochanoma’ (living space) where guests can relax and enjoy complimentary refreshments. The design is chic and contemporary, paying homage to traditional inns with natural light and simple furnishings. Oh, and there is a rooftop onsen with water pumped from 1500m below the ground, so you can gaze up at the stars while you absorb those minerals.

Situated in Gifu Prefecture, Yumoto Choza ryokan is traditional and perfectly so with tatami matted bedrooms and no less than four onsen. One thing that makes this inn so special is that many rooms feature traditional irori (sunken hearth) fireplaces, so you can enjoy the snowy surrounds in the warmth of a fire.

When it comes to luxurious accommodation, there is nothing like an Aman hotel. Their Honshu ryokan, set amongst the lush green foliage of Ise-Shima National Park might actually be heaven on earth, with pale wooden interiors and generous glass fronts overlooking the park. Villas feature private gardens, and there is a big focus on hot springs here with the 24 suites (each a generous 99 square metres) boasting their own private onsen.

Up in the mountains of Hokkaido, a short drive from skiing-hotspot of Niseko, you’ll find Zaborin ryokan. With two private onsen in each of the 15 villas (one indoor, one outside), Zaborin is perfect for those after a private experience because you don’t even have to share your water. Chef Yoshihiro Seno has designed his evening kaiseki menu using local produce, and traditional Japanese breakfasts await you in the morning. There is even a bar overlooking spectacular Mount Yotei and the ryokan’s private lake, or sit by the fireplace in the living room if you prefer some flames with your sake. How’s that for après-ski?
