The fare is equally impressive – Jaan (meaning bowl in sanskrit) serves up modern European cuisine that is often nothing short of an art form. Think Heston over Jamie.

In part thanks to a prominent ex-pat community, the buffet remains a key option at many a hotel restaurant. But this restaurant is far from your standard self-serve. Inspired by the voyage the British took in the late 18th century to the East Indies for trade, the venue hosts seven kitchens preparing dishes from the likes of China, India, Indonesia, Malaysia, the West and Singapore. For those who can’t fathom the thought of the buffet there is also an a la carte menu at Colony that offers a few Western dishes, as well as traditional Indian and Singaporean cuisine.

Though its not hard to see how Restaurant André landed such an accolade taking a look at its gastronomic creations. Owner and head chef André Chiang is behind the venue which proudly follows an Octaphilosophy – a set of guiding principles centred around the eight key qualities that include unique, pure, texture, memory, salt, south, artisan and terroir. Basically that means Restaurant André is a fusion that melts together the chef’s Taiwanese background, Japanese childhood, French training and new home in Singapore. Expect innovation in dishes and drinks alike – the wine list is purely natural with the sommelier refusing to reveal the identity of each glass until after it has been enjoyed.

www.blackwattle.com.sg 97 Amoy Street, Singapore Australian Clayton Wells has ventured into the Asian market with his first Singapore venue Blackwattle. Similarly to his Sydney space Automata, the restaurant is focused on showcasing interesting ingredients in a fuss-free manner. The kitchen at the 50-seat bar and eatery is led by former Automata sous chef Joeri Timmermans, and serves up a regularly changing five-course set menu, an a la carte option, and a snack bar menu, all displaying an Australian-influence in dishes. Think the likes of a king crab, partnered with braised pumpkin seeds, egg yolk, and white pepper broth.

Yes the sleek new eatery serves up both French and Chinese delicacies, but the restaurant sticks to the traditional – offering up instead a chance to take a gastronomic journey to one of two nations. Head chef Jean-Charles Dubois leads the charge at the new Singapore addition and promotes the use of local ingredients where possible, which includes fresh herbs and honey from the hotel’s garden and apiary. One dish not to miss? The frog’s legs in szechuan sauce.
