World renowned sustainable brand Potato Head have launched their latest restaurant, Tanaman at Desa Potato Head, Bali and even the most die-hard carnivores are salivating at the delish plant-based dishes on the menu. Driven by traditional Balinese flavours, the restaurant features a nostalgic menu of traditional Balinese dishes given new life, thanks to of-the-moment techniques.

Drawing inspiration from Indonesia’s native plants, the menu features a creative, 100% plant-based take on some of the nation’s most beloved comfort food. The featured recipes are a beautiful blend of instantly recognisable classics, reimagined dishes and utterly unique flavours which deliberately steer away from soy-based proteins in favour of roots, pulses, fruits and fungi.

Executive Chef Wayan Kresna Yasa and his team drew on their fondest childhood memories to create a menu that reflects Indonesia’s ancient culture. And they source all of the produce for the dishes directly from a handful of small, spray-free farms in Bali.

Among the fare finding pride of place on the new menu: Bajagor (Bakso Jamur Goreng): a modern, botanical take on the Batagor (a traditional West Javanese fried dumpling dish, usually made with mackerel), instead featuring field mushrooms and served with peanut and sweet soy sauce; and Rendang Nangka (Jackfruit Rendang) – an inspired plant-based take on classic West Sumatran dry curry, which features young jackfruit caramelised and braised in coconut milk for 16 hours to achieve an exquisite melt-in-your-mouth consistency, that’s mind-blowingly similar to the pulled beef used in the original.

Expect to wash it all down with native plant-powered potions, inspired by some of Indonesia’s best health tonics, juices and fermentations.
