This acclaimed Sydney chef is launching a Maldives restaurant and we're booking flights immediately

And it's at one of the Maldives most luxurious resorts.

At luxury, award-winning resort One&Only Reethi Rah, set in the stunning Maldives, a much-respected Australian restaurant group has opened an alfresco restaurant that is set to lure food lovers to the sought-after destination.

‘Botanica by Brent Savage,’ brings the Bentley Restaurant Group – the team who’ve brought us much-loved Yellow, Monopole, Cirrus and Bentley Restaurant + Bar – to the Maldives in delicious style.

Following the successful pop-up of restaurant Yellow at the resort in 2018, the permanent restaurant will expose guests to vibrant dishes filled with garden-fresh, sustainably sourced ingredients from Chef Brent Savage’s carefully curated menu.

In addition to the garden’s harvest, guests can expect to see the likes of wild, hand-caught Maldivian rock lobster, pickled wakame, buttermilk, sea succulents and finger limes on the plate. Seafood featured on the menu is sustainably sourced from local fishers, including lobster, octopus and reef fish. Savage’s dishes are then flame-cooked on the open-air charcoal barbecue.

Sommelier and co-owner of The Bentley Group Nick Hildebrandt has overseen the extensive wine list, which will compliment Savage’s cuisine. “There are plenty of iconic wines available along with a great selection of small and up and coming producers, as well as a dedicated Gin Bar with over 40 gins from around the world,” said Hildebrandt.

The Chef’s Garden forms a naturally scenic backdrop to Botanica, where guests can enjoy candle-lit al fresco dining amid the vegetables and herbs of the gardens – alongside the blooms in the neighbouring Orchid House.

“Botanica is a really exciting place to cook –I love that the restaurant is in the middle of the island, the space has a jungle-like feel as it is surrounded by established organic vegetable and herb gardens, which supply produce that we integrate in the menu,” said Savage, adding “I am looking forward to working closely with the in-house gardeners to grow more varieties of vegetables to showcase at Botanica.”
