Two well-known chefs set sail for an island residency in the Whitsundays.
This is not your average castaway situation. Daydream Island has launched its ‘Guest Chefs in Residence’ program, and is kicking off with Jesse McTavish and Adam D’Sylva on the pans. The talented pair will be stepping in to the resort’s kitchen for a week each this month.
From September 9–15, Bondi local Jesse McTavish will be at the helm of Daydream’s Inkstone Bar & Grill. During his residency, the chef will be serving up 7-day aged swordfish belly, local fish sashimi, and his take on a pavlova.

Once Jesse’s hung up the pans, Melbourne chef Adam D’Sylva from Coda and Tonka Restaurant will take over the island’s Infinity kitchen from September 16–22. Expect Island-befitting feasts of fresh spanner crab and betel leaf, quail and lychee and young coconut panna cotta.

The island’s executive chef, Keith Le Fevre, says, “Queensland has
some of the best produce in Australia and I know both Jesse and Adam will very
much enjoy our Island life”.
