Calling all vegans: we're going to the Maldives.

Vegan friends, it might be time you held back on the nutritional yeast flakes during the next couple of months’ grocery shops, because you’re now saving up for the ultimate plant-based getaway.

The Maldives luxury resort Soneva Fushi has just announced the opening of its new plant-based dining experience: Shades of Green.

Here, amid the resort’s verdant, organic garden, Danish chef Carsten Kyster has created a concept with three menus that centre on fresh, organic, local produce.

Simple, yet innovative, the menu combines Maldivian and Southeast Asian cuisines – using Kyster’s Nordic techniques. Naturally, the dishes are inspired by the garden and its seasonal fruits. A green, yellow and red menu each boast six courses with dishes that incorporate the themes of cleansing, crispy, raw, grain, fire and sweet.

Before you dine, the evening begins at 6.30pm with a tour of the garden, where guests can pick, feel, taste and smell the ingredients that will feature on their plates. Then gather around a central fire pit for the first course, and sit beneath the fruit trees for the main event.
