Party tricks don’t get more impressive than a colour-changing gin that also tastes amazing.

Called Ink Gin, the jewel-coloured spirit is made by Husk Distillers, a boutique distillery in Tumbulgum, Northern NSW. The premium gin is made from 13 organic botanicals, which include juniper berries, lemon myrtle, coriander seed, pepper berry,  elderflower, angelica root, licorice root, orange and lemon peel.

The secret to the deep violet colour is butterfly pea flower petals, an exotic flower from Thailand, which is infused into the gin after distillation.  Normally used in herbal tea, the petals are highly sensitive to pH, causing the gin to change from blue to blush pink when combined with acidic mixers like tonic water, lemon or lime.

Not just for show, the butterfly pea flowers add an earthy flavour as well as a subtle astringency that leaves the palate crisp and clean, allowing the citrus and floral notes of the botanicals to have a long, refreshing finish.

Ink gin is priced at $82 for a 700ml bottle from huskdistillers.com or Dan Murphy’s. The distillery has also just released a second ruby-red gin made from native rosella flowers.
