Four Pillars has a reputation for concocting some rather creative takes on gin (Christmas Pudding included). The local distillery continues to live up to its name, recently announcing that its much loved Chardonnay Gin will be making a comeback.
It’s the seventh solera of the Chardonnay Barrel Gin. The latest batch has had a full year in the barrel (six months longer than the 2017 release), giving it stronger notes of ginger, spice and oaky sweetness. How to serve it exactly? It’s suggested that you keep things simple with this spirit, pouring it over ice and (for the experimental) considering an added drop of honey and rosemary.
Joining the Chardonnay Gin is another extra special addition to the Four Pillars family – the first since 2016 to be exact. Sherry Cask Gin is now hitting shelves – a solera containing 42 ex-Sherry barrels which age from 15 to 35 years.
The resulting spirit is equally rich in both colour and flavour. “A pine-needle quality underpins some amazing complexity with crushed coriander flavours,” explains Four Pillars of its product. “The residual Sherry character has integrated beautifully with the deeper cassia and star-anise flavours – think dried fruit and nuts.”
