The gin geniuses from Four Pillars have turned winter’s most comforting dessert into a boozy tipple designed for sipping by the fireplace.
The limited edition gin is part of the Four Pillars Distillery Series, which sees the Healesville-based distiller collaborate with another like-minded distiller from around the world to produce an innovative new tipple.
This time around, they’ve paired up with Warner’s Distillery in the UK, a gin producer known for its naturally flavoured and coloured Rhubarb Gin.

Four Pillars accepted the challenge, creating its first-ever fruit-forward gin, made from Granny Smith apples from the Yarra Valley along with freshly pressed farm-grown rhubarb juice and a rhubarb juice spirit supplied by Warner’s.
To start, the Four Pillars team blended together coriander, lemon myrtle, wattle seed, cacao shell, nutmeg, cloves, cassia and ginger, with a hint of lemon rind to create a warm and spicy base gin. Post-distillation, the apple and rhubarb were added for a final layer of fresh fruit flavour.
Mix it all together and what do you get? A warming apple and rhubarb crumble in a glass. “It reminds us of crisp autumn mornings in the Yarra Valley, a shed of ripening apples and gardens bursting with produce like lemons and rhubarb. It’s fresh, but with a murmur of richer spices almost saying that winter is on the way,” the team from Four Pillars said.

The sweet, tart tipple is delightful on its own, or equally delicious in a G&T or fruit cup cocktail.
Four Pillars Green Apple & Rhubarb Gin is priced at $88 from fourpillarsgin.com and the Gin Shops at the Four Pillars Healesville Distillery and Four Pillars Surry Hills Laboratory and any good local bottle shops from April 18, 2023.
