There’s a new way to experience gin and it’s only here for the weekend

Gin fans, prepare for the ultimate pop-up, courtesy of Bombay Sapphire. The gin brand’s Project Botanicals pays homage to the global flavours of its botanically infused gin in Sydney from November 16 to 19. Guests are promised a journey around the world while indulging in gin-based cocktails from some Australia’s top bars matched with food from Studio Neon chef Aaron Teece.

The two-hour trip begins under a lush canopy of trees, where the Spanish origins of Bombay Sapphire’s lemon peel are explored. Then it’s off to the Javanese mountains where the cubeb berry is celebrated with peppery botanical fairy floss atop chicken skewers – the perfect accompaniment to a jungle-inspired cocktail from The Barber Shop gin bar.

Next on the map is China, where guests will discover the taste of liquorice via Bar Moncur’s Jasmine Bloom cocktail served alongside twisted duck pancakes with liquorice root gel. The coloured tile mosaics of Morocco mark the last stop of the immersive journey, where the citrus and ginger notes of coriander seed emerge. Lamb tagine is served with coriander yoghurt foam, and a sweet tea cocktail is poured from elegant teapots.

Topping off this avant-garde dining and cocktails concept is an audio-visual composition by Australian musician, creative and producer Ta-Ku in collaboration with award-winning animator Sam Price. The entwined layers of sound and individual soundscapes are designed to alter perception of the palate, unlocking different tastes and sensations while creating an immersive atmosphere like no other.

“The creativity and imagination brought to this new iteration of the Bombay Sapphire Project Botanicals experience is so exciting and a complete new offering for the Sydney and Melbourne scene,” said Peter Hollands, Bombay Sapphire brand ambassador. “Guests are in for an interactive journey around the world, with sensational cocktails and cuisine that will take you right to the edges of the earth.”
