So you can polish off your pudding with a cheese plate.
There’s one thing we at delicious. look forward to each Christmas, and no, it’s not jolly old Saint Nick, but a generous cup of festive gin.
This year it seems our Christmas wishes have already come true, with the imminent arrival of Four Pillars’ annual Christmas Gin.

The celebratory drop was first inspired by the late mum of Four Pillars co-founder and distiller, Cam Mackenzie. Each year, while the family was listening to the Derby Day races, Cam’s mum Wilma would create her delicious Christmas puddings, using a 1968 Australian Women’s Weekly recipe.
These days, Cam and his kids make the puddings (and listen to the races), using that same retro recipe. Those puddings are distilled and the resulting gin is barrel-aged for a year. Before bottling, the spirit is finished with a touch of Rutherglen Classic Muscat, to create that rich, Christmassy flavour we know and love.

If the prospect of a pudding you can drink isn’t exciting enough for you, the Victorian distillery is also bringing back its Christmas Pudding (in solid form), collectible Yuletide tea towel (featuring the 2022 edition label, designed by Aussie artist Jane Reynolds), and a brand new and very exciting addition – the Four Pillars Pickle.
If sweet desserts aren’t your jam, the distillery’s Sour Cherry and Fresh Yuzu and Apple Pickle will make a great addition to your post-lunch cheese board. It’s positively packed with a sweet and sour mix of yuzu-infused apples, botanical-infused oranges and sour cherries, to really make that hunk of blue cheese sing.
The Four Pillars Christmas Gin ($105), Christmas Gin Pudding ($30), Sour Cherry and Fresh Yuzu and Apple Pickle ($10), and Yuletide Tea Towel ($30) will be available from the Healesville Distillery, Surry Hills Laboratory, and www.fourpillarsgin.com from October 25.
