With traditional negroni and martini cocktails cementing their place in the spotlight, it was only a matter of time before the most bohemian of spirits, absinthe, was due for a comeback.

Forever associated with passionate artists holding salons across 19th century Paris, the iconic green spirit has been given a modern makeover with the Never Never Distilling Co’s Australian Absinthe, a distinctively Aussie interpretation created especially for Van Gogh Alive.

The local distillery’s pale green version doesn’t rely on artificial dyes, and adds lemon balm, aniseed, and hyssop to absinthe’s ‘holy trinity’ of traditional ingredients – wormwood, sweet fennel, and green anise. It’s best enjoyed solo in an absinthe drip, but will certainly bring a great kick to your homemade sazerac or corpse reviver.

Their Australian Absinthe will be traditionally prepared at the bar using antique crystal absinthe fountains, ready for you to fully immerse yourself under Starry Night skies.
