Mezcal is more than just a drink; it is a cultural treasure that encapsulates the spirit of Mexico and it is finding its stride in Australia. We can’t get enough of it. So why try this delicious tequila alternative and what is the difference between the two? Mezcal is the sophisticated older sibling to Tequila. Tequila is Mezcal, but not all Mezcal’s are Tequila. Mezcal’s are distilled from agave as is Tequila but Tequila is only from the Agave Tequilana variety, also known as blue agave. Mezcal is king in Mexico, with around 50 agave species. To make Mezcal you roast the heart of the agave plant in the fire. For Tequila you bake it. The roasting gives Mezcal that unique smoky flavour. Generally, the agave succulent takes 7 – 14 years to ripen for harvest. Some agaves take 20 – 40 years so you can understand why Mezcal is often set at a higher price point. This Mezcal stands out for its use of the rare Tepeztate agave varietal, known for its scarcity and complexity. A truly unique and distinctive mezcal that pushes the boundaries of traditional agave spirits. By looking at its title, you can probably guess why! Lamb. After the second distillation, a freshly butchered breast of lamb is added along with fruits and spices – a recipe that has been passed down through the generations. The result is a rich, deep mezcal with gamey, earthy, spicy notes. Some have even described it as lamb tagine – cinnamon, warm spice and of course, lamb.
