As if we needed another reason to pop some Champagne.
Sure a flute of Champagne is a lovely indulgence, but we may have found the most outrageous Champagne experience for those feeling a little extra – and it’s right here in Australia.
Lauded Champagne house Dom Pérignon has crafted the most indulgent way to enjoy your bubbles, in partnership with Melbourne dining institution Vue de monde. The P2 Ultimate Experience is a dream come true for the Champagne fan – an interactive culinary adventure that is the culmination of Vue de monde’s Shannon Bennett, artist Hiromi Tango and Dom Pérignon’s Chef de Cave, Richard Geoffrey.

Hiromi has transformed the private dining suite of Vue de monde, which sits on the 55th floor above the Melbourne skyline. Hiromi has created a vine-like structure of soft sculptural forms – a constellation on the ceiling using the traditional Japanese wrapping method of Otedama.
“It’s something that one would recall being in a vineyard on a starry night, gazing at the sky. I learned from the Vue de monde team and their Head Sommelier, Carlos Simoes that looking up at the sky is a tradition when drinking champagne, that it is an occasion for dreaming. Dining at Vue de monde is a beautiful and celebratory experience. I wanted the work to capture this celebration, imagination and playfulness,” says Hiromi of the intention of the installation.
8-12 lucky guests sit amidst this interactive artwork, nibbling on one of two distinct menus designed around Dom Pérignon’s bubbles by the executive chef team at the restaurant.

For $900 each, guests can choose between a ‘Pure’ exploration of Dom, or a second that integrates the Champagne with a selection of rare wines. Accompanying the drinks are an assortment of unique seasonal dishes – think rusty wire oyster with lemon myrtle, red hair kangaroo tartar, whole barramundi with crocodile consommé, and barbecued mango with ginger and lime.
But the best part of the evening is saved till last, where a vending machine filled with bottles of Dom Pérignon (yes you heard that right) farewells guests. Following the completion of The Ultimate P2 Experience, the host is gifted a special token in the shape of the iconic Dom Pérignon shield. This is used for the specially created Dom Pérignon ‘Illuminator’ in the lobby, which dispenses a chilled bottle of Dom Pérignon within a dramatic light display. An extra momento for the most extra of nights.
