Esmay will dish up hyper-local fare from spanner crab toasties to tangelo pudding.

Former head chef of ARC Dining and Saint Peter Alanna Sapwell is set to open a new pop-up restaurant at Noosa’s Wasabi Restaurant & Bar next month.

ARC Dining at Brisbane’s Howard Smith Wharves was awarded the number 1 spot in the delicious 100 last year, making it the best restaurant in Queensland. Unfortunately, ARC was forced to closed its doors in March this year, citing a downturn in business following the coronavirus pandemic.

New pop-up Esmay will celebrate the best in Noosa produce, with ingredients plucked from Wasabi’s own Honeysuckle Hill Farm or fished from local waters. Dishes will include crispy mountain potatoes with nettles, spanner crab toasties and local flathead with chestnut mushrooms and warrigal greens. For dessert, there’ll be tangelo pudding from the farm and a begonia, almond and native honey tart.

“In this time, we especially want to put ourselves in the customers’ shoes. We want Esmay to be a fun place to come together with friends and loved ones where everyone can enjoy great food, warm service and an iconic waterfront view,” Sapwell said.

Esmay will land at Wasabi Restaurant and Bar on July 15, where it will remain for a three-month residency.
