Lotus 2.0 will revisit all the dishes that made both Hong and the Potts Point diner famous.
It’s the reboot we’ve all been waiting for, a return of award-winning Potts Point diner Lotus with Dan Hong at the helm.
The pop-up bar and bistro will return to Challis Avenue after a seven year hiatus, taking over from The Fish Shop, which will close its doors this June.
Fans of the original venue will be treated to a blast from the past. In the name of nostalgia, the menu will parade Hong’s greatest hits, with inclusions like the yellowfin tuna sashimi in a sweet wasabi, soy and ginger dressing and the Lotus cheeseburger, made from a brisket, chuck and dry-aged beef fat patty stacked with bacon, cheese, miso onions and Japanese mayo. Hong’s hot fudge sundae will also make an appearance – honeycomb, peanuts, raspberry sauce, and all.
“Lotus was the beginning of my journey with Merivale and my first position as a head chef,” says Hong. “I was only 24 years old and hadn’t yet developed a distinctive style, but Justin trusted me to cook what I loved and thought was delicious. They were some of the best years of my career and it means so much to go back and cook where it all began”.
The Fish Shop is just one of several Sydney restaurants that will finish up this month, with Longrain and ACME also closing their doors in June.
