You guessed it, it's another Euro bistro.
The standalone constant of Millers Point, the Langham, is about to embark on an exciting new partnership with one of Sydney’s fastest-growing hospitality powerhouses, the Etymon Group.
Best known for their French-inspired and opulent restaurants Poetica, the Charles Grand Brasserie & Bar, and Loulou Bistro, the Etymon Group will open a yet-to-be-named restaurant within the luxury hotel in mid-April following a refurbishment of the Langham’s existing restaurant and bar.

Menu and concept are still undergoing refinement however Etymon’s director of culinary, Sebastien Lutaud can reveal that the venue will take its cues from the grandeur of old-school European holidaying.
“The concept is inspired by the relaxed and attentive service of the great restaurants found in iconic luxury hotels of Europe with a touch of the welcoming French, Italian, and Spanish Mediterranean coast,” explains Lutaud.
“The centre of the restaurant will feature a striking seafood bar with bar stools to sit with a glass of wine and enjoy a deliciously fresh crab omelette made in front of you. While a beautiful space, the restaurant will be very approachable and a destination for Sydneysiders as well as visitors. The location and surrounds of the Langham, Sydney are a perfect backdrop.”

The Langham (formerly the Observatory Hotel) has graced Kent Street since 1858 where it has been delivering an array of dining experiences, luxury stays, day spas and high-end hospitality to thousands of local and international guests. Its most recent restaurant offering, Kitchens on Kent wrapped its final service in November 2023 in anticipation of the new Etymon partnership.
The yet unnamed restaurant will open at The Langham, Sydney in mid-April.
