Exciting news for plant-based food enthusiasts and environmentally-conscious shoppers. Greens Supermarket, Australia’s largest plant-based and powered supermarket, has opened its doors in Newtown. With a range of more than 3,000 vegan products, the store takes a big step towards promoting sustainable living, zero food waste, and cruelty-free practices.
One of the standout features of Greens Supermarket is its approach to reducing food waste. Co-founders Peter Varvaressos and Sophia Stewart-Kasimba are modelling a zero-waste policy; the supermarket has implemented a unique system to repurpose unsold produce. Any fresh produce that fails to find a buyer will be redirected to the supermarket’s in-house production facility.

Here, the surplus ingredients will be used to create a range of ready-made meals, from poke bowls to hot pies and sandwiches. In addition, the two adjoining eateries – set to open in mid-August – Kimu Sabi (a Japanese-inspired sushi joint) and Hide (a teppanyaki diner), will incorporate these rescued ingredients into their menus, ensuring that nothing goes to waste.
What truly sets Greens Supermarket apart is its commitment to animal welfare. While most supermarkets discard unsold produce, Greens Supermarket has found a heartwarming solution. Edible items deemed inappropriate for human consumption but still suitable for animals will be donated to Zambi Wildlife Retreat, an animal welfare charity that serves as a sanctuary for retired show animals. This thoughtful approach not only helps the environment but also contributes to the well-being of these animals once the final curtain falls.
Imagine super creamy ricotta made in-house with almond milk, ready-made cakes, and “eggs” made with lupin beans, all aimed at providing delicious, cruelty-free alternatives to traditional animal-based products.

The team has even installed a free sparkling water station where visitors can fill up their bottles, as they correctly believe clean drinking water is a basic human right, not a privilege.
