Some of Australia’s coolest young chefs are getting even cooler during season 4 of The Piccolina Gelato Project: 8 Chefs In 8 Weeks. This time around, the theme is the nostalgia-filled classic Aussie Milk Bar.

Eight of Melbourne’s best-known chefs have teamed up with Piccolina to create 24 special gelato flavours, each available for a limited time.

Inspired by Milk Bar classics, this season’s offerings focus on retro flavours and childhood treats, bringing back memories of hot asphalt, summer holidays, and pocket money with every bite.

Melburnians can enjoy unique flavours from a talented group of chefs, including Stephen Nairn (Yugen Dining & Omnia Bistro), Philippa Sibley (Pinottã), Simon Ball-Smith (Brico), Jerry Mai (Pho Nom), Charlie Carrington (Atlas Dining), Audrey Allard (Holy Sugar), Raymond Tan (Raya & Nimbo) and Jacqui Challinor (ex-Rein & La Rue).

Each week, the chefs will present three different flavours, reimagining classic childhood favourites while showcasing their styles and skills. Familiar tastes with new flair, these flavours will transport you back in time. Just be home before the streetlights come on!

Week 1
2 – 8 October, Jacqui Challinor

Chocolate Crackle: Milk chocolate gelato, dark chocolate crackle
Bubble O’Bill: Bubblegum & strawberry gelato, milk chocolate stracciatella gelato, gumball
Finger Bun: Burnt butter gelato, toasted brioche & strawberry buttercream

Week 2
9 – 15 October, Stephen Nairn

Strawberry Clouds: Strawberry cream gelato infused with fresh basil, strawberry sherbet, dehydrated strawberry
Rhubarb & Custard: Vanilla custard gelato, rhubarb gel, rhubarb custard gummies
Bananas: Banana gelato, caramel ganache, banana cocoa nibs

Week 3
16 – 22 October, Philippa Sibley
Toffee Apple: Vanilla bean custard gelato, Pink Lady apple sorbet, toffee apple powder, chocolate stick
Million Dollar Bullet: Liquorice gelato, blackberry sorbet, chocolate layer cake
Cinnamon Doughnut: Cinnamon doughnut gelato, toasted doughnut crumb

Week 4
23 – 29 October, Simon Ball-Smith
Maltesers: Malt salted caramel gelato, dark chocolate stracciatella, chocolate coated malt crumble
Pineapple Lumps: Stracciatella gelato, pineapple jam, pineapple lumps
Frosty Fruit: Pineapple, orange & passionfruit sorbet, sherbet

Week 5 
30 October – 5 November, Jerry Mai
Kinder Surprise: Better Than Nutella gelato with white chocolate & gianduja stracciatella, Piccolina surprise
Cookie Dough & Chips: Cookie dough gelato, salted potato chips
Lolly Bag: Red Ripperz gelato, chocolate freckles, Mad About Teeth, sherbet

Week 6
6 – 12 November, Charlie Carrington
Zappo: Grape Zappo gelato, strawberry Zappo ganache
Raspberry Spider: Bilson’s Raspberry soda & tonka bean gelato spider
Popcorn: Salted popcorn gelato, salted popcorn powder

Week 7 
13 – 19 November, Audrey Allard
Nerds: Vanilla gelato, strawberry & Nerd grape jam, strawberry sherbet
Potato Cake: Rosemary & brown butter gelato, potato brioche croutons
Last minute Ingredients: Buttermilk gelato, homemade Oreo cookies, maple syrup

Week 8 
20 – 26 November, Raymond Tan
Pandan Iced Vovo: Palm sugar gelato, pandan marshmallow, pandan kaya, coconut sable
Matcha Milkshake: Sala syrup milkshake, matcha gelato, strawberry sherbet
Ube Custard Tart: Ube gelato, pie crust, ube custard, coconut flesh
