Australia’s pastry queen Anna Polyviou, is set to take over the kitchen of The Jackson Sydney on Sunday, May 12, 2024. Known for her extraordinary talent and infectious energy, Polyviou is gearing up to treat guests to an unforgettable floating experience filled with tasty snacks and a super-fun playlist curated by the chef herself.
Celebrated for her unique style and out-of-this-world creations, Polyviou is crafting a bespoke menu for The Jackson Sydney with a killer array of treats, from her signature “Berries Hearts” with layers of coconut dacquoise, almond crunch, raspberry compote, and vanilla bavarois, to moody chocolate fudge brownies, and vanilla buttermilk scones served with berry jam and whipped cream.

And let’s not forget the savoury options, including poached ginger prawn tacos, and smoked salmon with cucumber, dill and crème fraîche.
Guests will embark on a three-hour cruise departing from King Street Wharf, Barangaroo, or The Jackson Flyer at Rose Bay Wharf or Manly Wharf 3. With panoramic views of Sydney’s iconic Harbour, a glass of Chandon rosé upon arrival, live acoustic performances, and a premium selection of teas, coffee, and juices, attendees are in for an unforgettable experience.
