And his first menu champions the best from Western Australia.
Nic Wood from award-winning restaurant Santini Bar & Grill in Perth has been appointed executive chef at Gowings Bar & Grill, Sydney.
Wood was at the helm of Santini Bar & Grill when it was awarded a number of major accolades, including Best New Restaurant in 2018 and Restaurant of the Year in 2019.
Since joining QT Sydney, Wood has debuted his first menu, which sees his home state shine via a plethora of premium Western Australia ingredients.
Diners can look forward to new dishes such as WA-sourced Abrolhos Island octopus with crisp pancetta, green peppers, basil and black garlic and a White Rocks milk-fed veal schnitzel with buttered asparagus, which put Wood’s significant grower and producer relationships on display.

“Sydney has one of the best food scenes in Australia. Period,” says Wood. “I’m excited to be part of the action. I’m looking forward to bringing some of WA’s best produce to the Gowings kitchen and firing up the grill to deliver a menu of simplistic elegance.”
