Late last year, three of Australia’s most accomplished pastry chefs took their Gelato Messina side hustle at Rosebery’s Cannery markets and turned full-time with the opening of Shadow Baking in Darlinghurst. The patisserie became an instant and sublime success, with influences of nostalgic Australian flavours blended with classic French techniques.
Now expansion is on the horizon for Shadow Baking, an unsurprising move for a Gelato Messina affiliate. A cryptic Instagram post last week captioned “Coming soon…” with an aeroplane emoji announced the imminent launch of a new venue.

Everyone in Sydney knows the official bird of Marrickville is the low-flying plane and with Messina HQ under the flight path on Rich Street, today it was confirmed the new Shadow Baking outpost will open within the gelato headquarters.
In the short time since the Darlinghurst bakery opened, fans have queued to get a taste of chefs Tom Mitchell, Remi Talbot, and Florian Fritsch’s sweet and savoury creations which are as delicious as they are visually stunning.
For now you can catch Shadow Baking on the first Saturday & Sunday of each month at the Cannery Markets (61 Mentmore Ave, Rosebery) or at the bricks and mortar store at 243 Victoria St, Darlinghurst.
The new Shadow Baking outpost will be open every Saturday and Sunday from August 17 in Marrickville’s Messina HQ at 1 Rich St, Marrickville.
