The breakfast space that spearheaded the brunch revolution gets a facelift once again proving its place as one of Sydney's best cafes.

Let’s be honest – Bills isn’t a cafe, it’s is more of an empire. The breakfast institution now has outposts in England, Hawaii, Korea and in Japan, but it’s the eatery that started it all that’s recently come back into focus thanks to a recent revamp.

Owner and celebrity chef, Bill Granger, teamed with Sydney-based interior designers Meacham Nockles to recently update the original Darlinghurst outpost. The restaurant, which sits in a converted terrace house, was opened when Bill was only 24 and helped to make his name one that’s synonymous with ricotta hotcakes.

Following a similar design mantra to the popular Bondi venue, Darlinghurst Bill’s is now a primarily neutral palette with 1960s accents and an impressive art collection. Timber chairs, 1960s Castiglioni wall lights and Holmegaard glass pendants are just some of the finishing touches. There is also tobacco leather banquette seating and 1970s Spanish wall lights thrown into the mix.

Those with an eye for art can expect a collection courtesy of Tom Polo, a portrait of Client Liaison’s Monty Morgan by Sally Ross and an abstract by renowned artist Gemma Smith to complete the eatery’s ‘no fuss’ approach. And before Bills regulars panic, don’t worry the much-loved communal table remains intact.
