Fratelli Fresh may be famous for its pasta, but that’s a far cry from founder Barry McDonald’s latest venture. Opening in Bondi’s main drag is Green Dream, a celebration of the salad. The concept caters to the burgeoning demand for bespoke, as a ‘create your own’ salad bar, where you can choose to dine in or takeaway. There are more than 50 fresh, healthy ingredients to create your edible masterpiece, ranging from spicy broccoli to lobster, and to be topped with a choice of 14 different dressings that include a pesto vinaigrette and a spiced tahini. Every week, four salad specials will be conjured up by chef Ashleigh Jarvis, who has worked with McDonald for the past six years, as well as venues including Rockpool bar and Grill. Joining Jarvis’ creations will be a rotating feature salad courtesy of one of the country’s best chefs. Each selected chef will create a salad to sit on the menu for a month, with 10 percent of the sale proceeds going to that chef’s chosen charity. For the launch, Guillaume Brahimi has created a suitably French Nicoise Salad which will be available through the month of March. Bondi local Dan Single of Ksubi fame has been charged with Green Dream’s styling. Single is looking after everything from top to toe (uniforms included), enlisting the help of brother Beni Single on the paints, Dion Antony artisan on the custom woodworking, and Sloane Angell on the ceramics.
