Federico Zanellato, the owner-chef from Sydney institution LuMi Dining and Avoja Pizzeria, is not surprised at all. “For years, frozen yoghurt has been associated with a cheap product made from artificial ingredients, but that’s starting to change,” he says. The chef, who also owns Lode Pies & Pastries in Surry Hills, has just opened Freo, a “frozen atelier”, in the Sydney CBD, which churns out a fresh, natural product made from high-quality ingredients. Just a few years ago, Yo-Chi had a modest presence with four stores in Victoria. Fast forward to today, and the brand has skyrocketed to over 40 locations across the country, earning a dedicated following along the way. the rapidly expanding frozen yoghurt chain, has opened its largest store yet, taking over the iconic site that once housed Australia’s NOMA at Barangaroo, the late Cirrus restaurant. This striking location is a far cry from the early 2000s fro-yo aesthetic. Where once fluorescent lighting, blinding white tiles and pink cartoon fruit characters reigned, you’ll find copper plating, soft warm recessed lights and Scandi-blonde wood. Minus Seven
Inspired by retro video games and childhood nostalgia, Minus Seven is an homage to sweet treats and afternoons in the arcade. The name refers to the perfect temperature to serve frozen-yoghurt as well as a nod to a less than perfect score. With locations in World Square and Chatswood, the seriously chilled design by Vie Studios is only second to the frosty desserts and plentiful toppings on offer.
