A special event for fried chicken fiends has just arrived in Sydney.
Some may say we’re reaching peak sandwich saturation, but we’re not complaining. Among a bevy of specialty takes on the sandwich taking Sydney hostage, comes a new event with some sanga reimagining in mind.
Champagne and sneaker haven Butter has just announced The Sandwich Series – an eight-week long exploration in fried chicken sandwiches, the specialty dish of the Surry Hills favourite.
“At Butter, we have always been conscious to let our hero, the fried chicken sandwich, shine. Using only the best quality ingredients, serving it with simple flavours – pickles to cut through the fat, dashi butter to complement the crunch, maybe a tangy mayo or melted cheddar cheese to add some umami and some simple iceberg lettuce for freshness. But as much as we love simplicity, we thought it was time to spice things up a little,” the eatery explains.

What Butter is referring to is a special calorie-laden event which will invite some of Sydney’s most loved chefs to execute their take on the fried chicken sandwich – the only request is that Butter’s own fried chicken be used in each dish.
Each week will see a different chef take the reins, with their specialty fare to be made available at both Butter Surry Hills and Butter Parramatta.
Chefs involved include: Graeme Hunt (Chin Chin) with his fried chicken Banh Mi, Julian Cincotta (Thievery) with a fried chicken kebab, Kerby Craig (Ume Burger) with a Japanese-inspired Nanban Roll, and Dan Pepperell (Albertos Lounge, Restaurant Hubert) with a fried chicken diavolo.
The line-up will be followed by Andy Bowdy (Saga) with the only dessert concoction of wonder white bread, salted caramel ice cream, peanut butter and chicken skins, Nelly Robertson (Nel Restaurant) with a Japanese curry fried chicken katsu, Gregory Llewellyn (Wishbone, ex Hartsyard) and his southern country fried chicken sandwich before Monty Koludrovic (Icebergs Group) finishes things off with a yet-to-be-announced creation.
“I think it is a great way for these chefs to express themselves beyond
the confines of their restaurants and an awesome opportunity for Butter’s customers to get a taste of how these talented chef’s love to eat the simple sandwich,” says executive chef and co-owner Julian Cincotta of the collaborative new series.
