The Bar Liberty team have taken over The Beaufort

And will be bringing it back to life with Italian eatery Capitano.

Carlton institution The Beaufort is back, but this time it’s going to look (and taste) a little different. The team behind Bar Liberty have taken the reins of the Melbourne drinking den, and will be reviving the space into an Italian eatery, mixed with influences from both the USA and Australia.

Bar Liberty come equipped with plenty of experience in the hospitality field, with owners Michael Bascetta, Banjo Harris Plane, Manu Potoi and Casey Wall, already involved in Melbourne venues Bar Liberty, Rockwell and Sons and Above Board.

Now their attention has turned to Italian fare, with a menu inspired by what chef Casey Wall enjoys eating on his days off. It’s a hearty list of dishes based around Italian flavours, but utilising Australian ingredients. at the menu’s core is a rotating selection of pizzas, supporting an ever-changing array of pasta. Italian fans need not fear; a selection of the cuisine’s favourites will also be made available, lasagne and tiramisu included.

The eatery itself will be casual in design; guests are invited to pull up a stool for a drink and a bite at the bar, or to reserve a table if they prefer. Locals will also be treated to a take away service option.

Food will be taken care of by head chef Blake Giblet who moves to the Capitano kitchen from fellow Melbourne favourites Movida and Cumulus Inc., as well as time in London at Soho favourite, 10 Greek Street. He will be joined in the team with Sam Rogers as front of house, and sommelier (and co-owner) Banjo Harris Plane on wine duty. The drinks list will focus on fun, juicy Italian drops sourced locally and internationally, joined by classic Italian cocktails.

The Italian theme of the space continues into the interiors. A terrazzo tile flooring has taken the eatery hostage, accompanied by a palette of muted green and red, and deco light fittings. But the main character of Capitano may well be the hardwood bar which runs down its centre, dividing the bar from the restaurant. 

Capitano will be open 7 days from 5.00pm until late on weekdays, and from 12.00pm on weekends.
