In celebration of turning three, Bibo will now trade seven days.
One of Sydney’s most adored watering holes has confirmed that change is afoot, but all for the better. Double Bay’s Bibo is this year turning three, and in celebration will be introducing a slew of changes that regulars will no doubt be happy to hear.
First off the bat is the fact that the New York-inspired bar will extend its trading hours, and will now be open seven days a week. Bibo will be open from 5.30pm Monday to Thursday, and from midday Friday, Saturday and Sunday.

The menu is also due for a revamp and will take further inspiration from chef Jose Silva’s Portugese roots. Contemporary Mediterranean fare will feature prominently, and a daily Aperitivo hour introduced. Of the latter addition, these evenings will focus on a rotating producer, and offer $6 beer, $8 wines, $10 cocktails and $5-$10 snacks.
The first of the Aperitivo sessions will focus on field blends, as chosen by sommelier Louella Mathews. “Field blends began in the old world with less focus on grape varietal but more on the terroir that they originate from. Terroir is usually defined as the time and place of when the grapes are grown, but for me this involves people; the winemaker, the grower, the supplier and the connection they have with the wine,” she explains. “Aperitivo at Bibo is a time to discover something new and enjoy the results of multiple cultures creating something great for the community and the palate.

Of course even outside of Aperitivo hour there’s plenty of specialty drops to enjoy. The wine list is 400-strong and offers 34 by the glass, and is supported by the private cellar of co-owner Paul Jones.
A special Sunday feast is now also be held weekly, which will see a whole suckling pig served up. The eager will luckily be able to pre-book to avoid missing out.
