One of Sydney’s most nostalgic dining spots is getting a fine-dining facelift – 81 floors above the city – thanks to legendary chef Mark Best.
There’s no denying that Sydney is a city of icons. Postcard-ready sights like the Opera House, Harbour Bridge and Bondi Beach are known the world over – but there are some Sydney-isms that hold a deeper, more nostalgic kind of pull for locals.
All Sydneysiders of a certain age have a soft spot for the Monorail. Others might remember the floating Chinese restaurant on Sydney Harbour, or the revolving restaurant at the top of Sydney Tower (also previously – and for some, forever – known as Centrepoint Tower) – once the very height (literally) of special-occasion dining.
And while Sydney knows how to do icons well, it’s also a city that’s ever-changing, which means some of those beloved landmarks have fallen victim to time and progress (vale, Monorail).
But one of them? It’s about to get a brand new spin.
This August, the restaurant on level 81 of Sydney Tower is being reimagined as Infinity by Mark Best.

Best, who gained national recognition as the visionary behind Marque Restaurant – which closed in 2016 after 17 years as a fixture of Sydney’s fine-dining scene – will lead the kitchen day to day. He’s curating a menu that leans into storytelling, provenance and a uniquely Australian sense of place.
“Infinity by Mark Best is an opportunity to define what Australian dining can truly be: delicious, contemporary, culturally resonant and grounded in ingredients and identity,” says Best.
The opening menu will feature a series of signature snacks and dishes that celebrate the best of local produce. Think Coffin Bay oysters, South Coast sea urchin, Margra lamb – all ingredients chosen not just for quality, but for their ability to tell a story.

“I want to tell a story of place, memory and innovation – to express who I am, and who we are – on a plate,” Best says. “I want to explore the evolving story of Australian cuisine, drawing on memory, transforming the familiar and crafting a dining experience that connects land, culture and imagination in a setting unlike any other – 81 floors above the city that shaped me.”
The restaurant’s interiors will undergo a transformation of their own, with a sleek, minimalist look designed to let the food – and the 360-degree views of Sydney – take centre stage. Expect a palette of navy, charcoal and warm timber browns, layered with polished brass and soft amber glass.
