The Brisbane chef will shortly welcome Corella to his portfolio.
It was only a fortnight ago that esteemed Brisbane chef Paul McGivern passed along his fine diner The Wolfe to rising sensation Josh Lopez. But in that time McGivern has already begun a new chapter in the food realm with the reveal of his plans for his next restaurant.
Dubbed Corella, McGivern has already confirmed that the eatery will be a part of the new Aria Property development in Woolloongabba, The Drapery. Corella will be the sleek new precinct’s key restaurant; the 50-seater will be governed by McGivern behind the scenes, with chef Callum Grey charged with running the kitchen.
The menu isn’t expected to stray too far from the fare served up at The Wolfe, and will maintain McGivern’s reputation for simple, produce-driven dishes. But only time will tell as to what exactly Corella itself will be serving up to hungry Brisbanites, as well as what form it will take.
Alongside the new addition to Woolloongabba, McGivern will continue to manage his Fish Lane favourites Fish Lane Bar and eatery La Lune.
