And pastry's princess of punk, Anna Polyviou is on board, reports Mariam Digges.
It’s the news that KITKAT fans have been waiting for.
Following on from the success of their eight-week studio pop-up at Melbourne Central last November, KITKAT has announced they’ll be opening the doors to their first-ever permanent Chocolatory on 21 October.
Translation: there will now be a perpetual site to get your bespoke KITKAT fix, any day of the week.
They’ve teamed with Anna Polyviou, Shangri-La Sydney’s mohawked executive pastry chef, on four exclusive bars – dubbed the Melbourne Street Collection – for the launch.
“I’m a Melbourne girl, and a massive KITKAT fan, so it was a pretty awesome feeling being asked to do this,” Polyviou, dubbed the punk princess of pastry, says.
“Everyone wants to be a child again, no matter how old they are. I still remember going to the drive-in with my dad and brother as a kid. We were watching Rocky Balboa and my dad bought us popcorn, Coke and KITKAT bars. I remember my brother screaming at me because I would never share my KITKAT, even though they’re designed for just that.”
Polyviou, whose mind-boggling 74-step dessert stunner, ‘Anna’s Mess’ sent home a MasterChef Australia contestant earlier this year (it was billed as the most difficult challenge in the show’s history), has collaborated with Melbourne street artist Dvate on the bars, which feature original chocolate ‘graffiti’ artworks. They’ll come packaged in a special commemorative box featuring the colourful works, too.
“I wanted the bars to pay tribute to some of my favourite spots in Melbourne,” she says.
As expected, the Melbourne Street Collection – in true Polyviou Style – is packed with snap, crackle and rock. First up is Hosier Lane: Caramelising the Streets. Polyviou’s self-confessed favourite is a sugary ode-to-your-childhood in the form of crisp wafers, caramel fudge, nougat, popcorn and potato chips, coated in milk chocolate.
“It’s where MoVida is in Melbourne and my absolute favourite laneway,” the pastry chef says.
Next up is the St Kilda: Sundae Session, where Polyviou fondly recalls Sundays spent in the beachside suburb via wafers, marshmallow, pretzel and raspberry jelly drops, encased in dark chocolate.
Little Bourke: Yo Maccha Me Crazy makes the buzzy stoneground Japanese green tea powder the star, along with coconut, cornflakes and white chocolate. And Luna Park: Candy Craze is a syrupy fairground affair filled with 100s & 1000s, pop-rocks and rice crispies.
Like before, folks will still get to create their own bespoke bars using premium-grade, 100% sustainable UTZ certified chocolate, pimped with a rotating selection of ingredients.
The sugar-high begins at 11am on Friday 21 October, on level one of Melbourne Central.
