Big changes abound for the city Greek stop.
The resolution ‘new year, new you’ is embraced by everyone, even restaurants it seems, with a bevy of eateries revealing big plans for major change this month. One such venue is Sydney CBD Greek stop 1821, which has just announced its partnership with Greek-based company BlueFish Restaurants.
The Sydney restaurant and the Greek chain will be united under the direction of executive chef George Economidis, the owner of the trio of BlueFish Restaurants who will be taking over 1821 in terms of cuisine. “My cooking is inspired by my passion to create, my love for raw ingredients and the blue Greek ocean. It is not the recipes that make Greek cuisine special but the soul of the Greek culture that make it unique,” he explains of his food direction.

Economidis will be working alongside 1821 head chef Luiza Gomes in the kitchen, with the duo collaborating on a new menu which has shifted focus towards fish and seafood. You can expect the range of new dishes to include a snapper fricassee with spinach, lettuce and egg-lemon sauce, and a sous vide lamb with crackling, potato puree and pistachio crumble.
As part of the new collaboration, it’s also been announced that a BlueFish chef will be in residence year-round at 1821. The first chef to take the reins will be Panagiotis Sakellios, head chef of BlueFish Vouliagmeni in Greece.
But it’s not just the menu that will embrace a new direction but the interiors. Athenian designer Dimitris Economou, the man behind 1821’s original $3 million fit out at its launch will be back on board for a minor revamp. Changes include the emergence of a new bar, settled against the brick Greek wall mural, as well as a private chef’s table for up to 10 that will sit opposite the pass.

No one may be more excited about the new 1821 than owner Jim Kospetas. “I have visited Greece extensively in the last year and I have been amazed at the emerging trends and the rising stars in the Greek dining scene,” he commented. “I am very excited about collaborating with George and BlueFish. This collaboration completes my vision for 1821, which is ‘Made in Greece’.”
