Poly sets sail for the southern capital, but for one night only.
Poly burst onto the Sydney bar scene last August, a moody younger sibling to Mat Lindsay’s more formal Ester. And just as the latter has become a firm favourite among local lovers of natural wine and innovative bar snacks, so too has Poly.
So as not to allow Melbourne residents to miss out on the adored range of bites and vinos available at Poly, the wine bar will be moving down south, albeit briefly. In March Poly will be taking up residence at wine bar Embla, a venue as equally revered for its edible creations and lengthy drinks list.
The pop-up will take place for one night only, as a part of the celebration of six months of recent Embla addition Lesa. Lindsay is just one of a gaggle of industry friends Embla’s creators Christian McCabe and Dave Verheul will be welcoming to the two-storey establishment as a part of the festivities.
So pull out your diary and mark down the date of Saturday, March 16. Dubbed ‘a vinous supper service with Embla and Poly’ the collaborative foray has promised ‘an evening of small plates, tunes, an abundance of wine and inevitable fun’. It’s a supper event that will take place post-dinner service, with a focus on wine accompanied by both Verheul and Lindsay’s favourite late night snacks.
Be warned that Embla doesn’t accept bookings so the event will be a first come, first served basis. If you’re eager to attend, we suggest you show up early. And don’t plan on getting to bed at an appropriate hour either; Embla has already confirmed that it has extended its opening hours until 3.00am in anticipation.
