Howard Park Winery pops up in Western Australia.
Winery dining in the Southwest of Western Australia is some of the best to be found nationally, but what do you do when you don’t have a restaurant to match your premium wine offering? Well, pop up.
Howard Park Winery in the Margaret River region are to launch their first pop-up this summer, which will see two of the state’s best young roaming chefs – Paul Iskov of Fervor and Tim Whitty of Kitchen Takeovers – take up residence in The Wine Chapel, Howard Park’s new tasting facility inspired by the world’s great Champagne houses of Krug, Pol Roger and Laurent Perrier.
Paul Iskov of Fervor has made his name in WA and beyond as a proponent of native ingredients; setting up his restaurant for a couple of nights at a time, everywhere from outback stations to urban distilleries.
The chef, who trained at Perth’s Restaurant Amuse amid stints at Noma, DOM, Pujol and Vue de Monde, has quickly going from under the radar to the hot dining ticket in WA.
“It’s a bit of a departure for us from our 10 courses that we do when we’re on tour, but it allows us to do an informal three-course lunch with a few snacks,” says Iskov.
“We’ll still be using the native ingredients we love, and get to chat to the diners about them, while also using some produce we don’t often get to use.”
Both Iskov and Whiitty said they are using the best of the Southwest, from local Arkady lamb, macadamia nuts from Treeton Road, fresh crab, marron and a larder of native ingredients from lemon myrtle, saltbush and Geraldton wax to wild rosella and sunrise lime.
“Howard Park approached us with the idea” says Iskov, “and we felt that The Wine Chapel has a really nice feel, with a small amount of seating. It’s the intimate dining experience we’re known for.”
Whitty is first up from 2-4 January, with Iskov and his Fervor crew taking over from, Saturday 9-11 January. Cost $120 per person for the three course lunch and matched wines from heavy hitters like Vasse Felix, Wills Domain and Aravina.
