As reported earlier, Adam Wolfers is back with his roving restaurant Ételek, this time settling in Sydney’s Potts Points. The three-month pop-up is taking up residence in the former Gastro Park/Antipodean site from today, led by Wolfers who has partnered with Marc Dempsey on the enterprise. It’s a continuation of a very successful pop-up which has already taken hostage restaurants including Ester, Bar Brosé, Casoni, EightySix (Canberra) and Lee Ho Fook (Melbourne).

Meaning ‘food’ in Hungarian, Ételek’s menu draws on Wolfers’ Eastern European heritage, as well as his time in the kitchens of est., Marque, Monopole and Yellow. The fare has taken inspiration from Eastern European, Middle Eastern and North African dishes and has been promised to include Ételek favourites, as well as brand new offerings. The menu is divided into smaller, larger and sweet dishes, as well as a selection of artisan breads. Think Nokedli dumplings, sea urchin & walnut or the ‘Everything Bagel’ with buttermilk cream cheese and dill. Then there’s the larger options of bottom sirloin, kohlrabi & white poppy seed. The Ételek signature of a meat-free parsnip schnitzel, served with hot sauce and pickled cucumber, will also be making an appearance. While sweet finds will find solace in dessert offerings including Jerusalem artichoke ice cream and matzo praline or tangerine poppy seed cake and buttermilk.

Despite the nomadic nature of Ételek, Wolfers wants the three-month pop up to feel permanent. “I want to create the feel of a neighbourhood restaurant, with a regularly changing menu allowing for multiple visits,” he says. “Ételek has given us the opportunity to travel interstate, where I continue to be in awe of our countries produce. My intention is to showcase these ingredients through contemporary interpretations of the dishes I was raised on.” Dempsey will be taking care of the drinks list, which will predominantly focus on small producers working with ethical practises. “Things will be organic wherever possible,” he comments, “There will be wine for all palates and budgets with some safer things, some wilder things, and some mystery drinks too.”

Ételek will be open from 5.00pm Wednesday through Saturday and from 2.00pm on Sundays from July 25 to October 13. A series of Sunday events will also be integrated into the pop-up including a collaboration with Gregory Llewellyn (Hartsyard, Wishbone) to host a New York style brunch on August 26.
