Pinbone sets up a new restaurant in a bottle shop

Is this the most unexpected pop-up restaurant of the year?

It has been a year heavy in collaboration for the culinary scene, with teamwork among foodies only continuing to bloom. The latest news is no exception, with two of Sydney’s most creative groups – hospitality empire Merivale and the duo behind the lauded Pinbone – joining forces for a pop-up enterprise.

For six months, Pinbone will be setting up shop in what is currently the drive-in bottle shop of The Tennyson Hotel. The Merivale-owned venue will host the eatery, to be dubbed the Mr. Liquor Dirty Italian Disco, from October. It is expected to dole out American-style Italian food for the course of its existence, like bruschetta, pasta and wood-roasted meats. Pinbone chefs Mike Eggert and Jemma Whiteman will take to the kitchen, and their former partner Berri Eggert will take care of front of house. “It’s warehouse Italian, very New York”, says Mike of the concept, “We’ll be cooking from a big wood-fired oven and grill. It’s going to be fun and fast, simple and delicious.”

Pinbone won’t be turning its back on the bottle shop bones of its new home. Guests to the restaurant will be able to buy their own alcohol from the walk-in fridge, before they grab a seat at one of the 90 seats set up in the driveway.

“This is unlike anything we’ve done before,” Mike continues. “We want it to feel like you’re in someone’s garage house party, where you’re eating amazing food and listening to pumping tunes. It’s super casual, super crazy – and all about having a great time.”

It’s not the first time that Pinbone has set up shop outside of its original Woollahra venue. The restaurant has been prone to movement around Sydney, previously hosting a residency at 10 William Street, and most recently in Kensington with the Chinese-inspired Good Luck Pinbone.
