Josh Gray has been one to watch for a while. If you can tear yourself away from the cocktail bar at the front, Any offers a choice of a la carte in the compact dining room, but for the best seats in the house perch at the counter for the finely pitched tasting menu. Balthazar

In recent years Balthazar has subtly reinvented itself. It’s always had the air of a place where deals are done over long, languid, and liquid lunches, but now under the next generation of owners it has established its front bar as a true wine destination, with the dining room still a major draw. This isn’t the territory of overplayed dishes designed to make the chef feel like an artist, more it’s a modern European menu that has a degree of comfort and informality. Fleur

As part of The Royal from the John Parker stable of hospitality venues, Fleur shakes off any notion that it’s part of a pub. Chef Shane Middleton quickly made this a place to be, channelling the informality of the wider venue with delicate, smart and modern French fare. Go a la carte, or down the tasting menu route, settle into the art-filled dining room, or grab a group and indulge in the private dining with the caviar menu. Bump anyone? Wildflower

Sitting atop the landmark State Buildings development which has become an international calling card for Perth hospitality; Wildflower has carved a reputation for fine dining underpinned by native ingredients and observing the six seasons of the Noongar calendar. Chef Michael D’adamo’s menu may use endemic freshwater marron, seafood from WA’s vast coastline and an assortment of coastal herbs and native limes.
