“Every day at four o’clock, doesn’t matter what’s happened, we have a family meal.” Sam Young says. “I don’t really call it staff meal, usually call this ‘family’ meal. Because chefs in the hospitality industry, we spend more time with our colleagues than our actual family. Family meal is the most important meal of the day for me, where all the staff can sit down and eat one meal together. I think that just creates the most amazing culture.”
A power couple
S’more is Young’s first solo venture, and is also the former Lotus head chef’s first time working front-of house, with Chen leading the kitchen. “I think a lot of people believe that a couple can’t work together, but – after working in multiple kitchens together – I think we have proven everyone wrong. Which I love,” Young says.

Young describes the team he and Chen have assembled as the best he’s ever worked with; and the nightly family meal is a way to show their appreciation. “You are only as good as your team. It’s really important to have your team to back you up. And really looking after your team is crucial, and the key to the success of the business… People are leaving the hospitality industry, you know… I think we have to want the change.
