The Fass, as he’s known ‘round these parts (the delicious. office, that is), is known for loving meat and championing old-school techniques with a few modern twists, it’s kind of… erm, interesting that the chef behind Four in Hand and 4Fourteen loves cranking up Vengaboys in his kitchens. It’s possibly less surprising that The Fass is into Ronan Keating – the Irish like to stick together. To each their own, we say – as long as we get our hands on Fass’s colcannon, we don’t mind what he listens to while he makes it.
