5 easy ways to spend dinnertime at the table rather than in the kitchen

It’s cheating – but not in a home-delivery kind of way.

1. Salmon and brie pizzas

Long the reserve of greasy takeaways, homemade pizza can be a fast and healthy dinner that gets a tick from kids and grown-ups. If you’re looking to up your weekly omega-3 hit at the same time, top store-bought pizza bases with pesto, smoked salmon, blanched and sliced asparagus, and thin slices of Castello® Double Cream Brie. Bake on a pizza stone in a piping hot oven (the hottest you can dial it up to) until the bases have crisped up and the brie is gooey.

2. Fast spring fattoush

Spring has sprung and brought with it a bounty of bright greens. For a light dinner ready in minutes, stand trimmed sugar-snap peas, beans and snow peas in boiling water for two minutes, then drain and refresh under cold water. Meanwhile, brush Lebanese bread with olive oil, garlic and seasoning and bake in a hot oven until crisp. Toss the greens with cherry tomatoes, diced red onion, cucumber and Castello® Fetta Cubes marinated in oil with herbs and garlic, and top with shards of the crisp bread and a lemony vinaigrette.

3. Posh cheeseburgers

Investing in high-quality ingredients will take your burgers from mediocre to magic. Combine grass-fed beef mince with garlic, thyme and seasoning, shape into thin patties and stand for 20 minutes. Then, cook in a frypan until cooked through, adding a slice of Castello® Creamy Havarti on top of the patties during the last few minutes to melt slightly. To serve, spread onion jam onto lightly toasted milk or brioche buns, top with tomato, cheesy beef, rocket and aioli and finish with the bun top. No one will mind when these hit the table.

4. Fusilli with beetroot, walnuts and cheese

Pasta nights are always well received and don’t have to leave you feeling weighed down. This one is halfway to a salad, with a cheesy protein hit to keep everyone full for longer. The best part is the leftovers make for a knockout lunch the next day. Combine cooked fusilli pasta and a splash of the cooking water, olive oil, pre-cooked or canned beetroot, toasted walnuts, Castello® Creamy Blue that’s been crumbled slightly, and flat-leaf parsley together in a bowl. Serve to the hungry and time-poor.

5. Cheesy chicken parcels

Looking to win over young and old? Crumbed chicken will do it every time. Elevate your humble schnitzel by topping crumbed breast thins with Dijon mustard, a slice of ham and a slice of Castello® Creamy Havarti. Roll the chicken over to cover the ham and cheese and fry off in hot vegetable oil, finishing in a hot oven for a further 10 minutes. Serve with a simple salad of dressed leaves.
