Yoghurt has been a culinary staple for thousands of years but it’s definitely having a moment in the sun right now, writes Justin Wolfers.

While we all know it’s great for breakfast or in smoothies, it’s also a healthy alternative to go with salads, meats, soups and a variety of desserts. Full of live cultures and great for your overall wellbeing, it is delicious natural, Greek-style, or fruit flavoured, such as those available from Tamar Valley Dairy.

Dress up your salad

Even just a dollop of yoghurt will add richness and flavour to any salad, especially when citrus is a main player. You can also base your dressing around yoghurt’s distinct flavour profile, like in this tangy, herby chickpea salad. Try using yoghurt instead of mayonnaise in a coleslaw to add a healthy tang, or stir it through a cucumber salad for some tzatziki-style freshness.

Enliven comfort foods

Hearty soups are often full of cream or salty stocks, but you can easily give yourself that fireside feeling guilt-free by adding yoghurt to your favourite soup, such as this leek and yoghurt soup with slow braised onions. Yoghurt is also the perfect way to cool your mouth when eating spicy food and a classic Indian raita will soothe any chilli-laden curry.

Marinate fish and vegies

Want to shatter expectations at your next barbecue? In this yoghurt-marinated fish wrapped in zucchini, your guests won’t believe their eyes, or mouths. It’s rich without being overwhelming, and brings out the full flavours of the fish. You can try a yoghurt marinade with pumpkin or eggplant, too. And let’s not forget how much yoghurt is responsible for the heavenliness of tandoori chicken.

Substitute cream for yoghurt in pavlova

Everyone has their own way of doing a pav, whether it’s with tropical fruits or mixed berries. But when you lay your nest with yoghurt instead of cream, not only did you just make dessert that much healthier, but you revitalised an Aussie icon. Try combining berries with rhubarb for the perfect mix of tart and sweet, or surprise everyone by drizzling a little honey over the top.

Impress easily with this frozen yoghurt layer cake

Much easier than an ice cream cake, and with no churning required, you can make a lively and striking statement with this frozen strawberry yoghurt cake. It’s creamy enough to be for all seasons – and combining different flavour combinations lets you access all the colours of the rainbow. Short on time? You can blend your favourite yoghurt with frozen fruits and a little squeeze of lemon for an instant crowd-pleaser.
